Ingredients

2-4 cups chopped romaine lettuce or leafy green of choice

1 serving quinoa cooked and chilled (1/4 cup dry)

½ cup black beans

½ cup corn

½ cup red pepper, chopped

1 small tomato, chopped

½ tsp. cider vinegar

1/4 cup finely chopped fresh cilantro

Coarse salt and ground pepper

2 Tbsp. red onion, diced

Avocado slices

For Dressing:

2 tbsp. extra virgin olive oil

1/4 cup fresh limejuice

1 tsp. minced garlic

½ tsp. mustard

Directions:

1. Put all of the salad ingredients in a bowl, mix up the dressing ingredients in a bowl, use it to top the salad, and enjoy!
